Do you want to be part of a completely unique food, drink and events venue where each day is different from the next? Then this position is for you!

The position would suit an experienced Chef looking for a new challenge. Someone who is creative and pragmatic. Someone who loves to work in different projects.

We are a busy city centre venue that has traditional roots but a contemporary offer. This gives us scope to run creative street food menus throughout the summer months.

The Role
To ensure that the kitchen is maintained to the highest standard and compliant with all legalities. To manage service efficiently and maintain communication with FOH. To manage and motivate members of the team on a day to day basis.

Responsibilities
Kitchen:

  • To prepare, cook & present as per spec sheets.
  • Help plan daily specials whilst minimising waste.
  • Assist orders of food stock appropriate to sales levels
  • Prepare food for service in line to sales levels
  • Ensure tock rotation is followed and that stock areas and fridges/freezers are in line with FIFO principles.

Management:

  • Ensure the kitchen runs smoothly by following the correct systems and procedures, including staff compliance
  • Implement all Health and Safety and Food Hygiene requirements.
  • Ensure the kitchen is clean and hygienic, making sure cleaning rotas are adhered to and records kept.
  • Keep records of all invoices
  • To ensure that FOH is kept to a high standard, with communication, organisation and daily systems
  • To report on a weekly basis to management
  • Controlling stock and adhering to GP levels
  • Communicating with suppliers

  • Food GP Targets
  • Delivery Time
  • Customer Comment Cards
  • Unannounced in-house Food Safety Audits
