Job Title: Senior Sous Chef

Salary:£39,000 - £42,500 depending on experience

Purpose:
Support the Head Chef in food preparation and service, ensuring the highest standards at all times.

Key Responsibilities:

  • Lead shifts and supervise staff in the absence of the Sous Chef, maintaining top-quality service for Fellows, College guests, students, and staff.
  • Deputise for the Head Chef when needed.
  • Assist in supervising the Sous Chefs and manage kitchen resources efficiently, minimizing costs and energy usage.
  • Follow Food Safety and Health & Safety regulations.
  • Collaborate with the Head Chef to compile and submit food orders, ensuring proper stock rotation.

Food Preparation & Menu Planning:

  • Assist with planning and developing cyclic menus.
  • Contribute to the creation of signature dishes for functions.
  • Promote the use of fresh produce and ensure dishes meet agreed recipes.

Food Service:

  • Ensure excellent customer satisfaction in food preparation and service.
  • Oversee food service areas, ensuring proper staffing, preparation, and presentation.
  • Brief food service staff on menu content and allergens before service.
  • Conduct regular checks during meals for availability, cleanliness, and presentation.

Staff Development:

  • Work with the Head Chef to develop training plans for kitchen staff.
  • Provide on-the-job training and develop staff to competition standards.

Other Duties:

  • Support staff induction and complete progress reviews during probation.
  • Record staff sickness and conduct appraisals as directed by the Head Chef.
  • Assist with other duties as required by the Director of Hospitality and Head Chef.

Person Specification:

Qualifications:

  • NVQ Level 2 & 3 in Professional Cookery
  • Basic Food Hygiene Certificate
  • Training in HACCP and COSHH

Skills & Experience:

  • Strong leadership, organizational, communication, and customer service skills.
  • Minimum 3 years in a similar role with HACCP knowledge.
  • Experience in a College environment (desirable).

  • Flexible and able to adapt to change.

Conditions:

  • Must be able to work weekends and overtime as required.
