Job Title: Senior Sous Chef
Salary:£39,000 - £42,500 depending on experience

Purpose:
Support the Head Chef in food preparation and service, ensuring the highest standards at all times.
Key Responsibilities:
- Lead shifts and supervise staff in the absence of the Sous Chef, maintaining top-quality service for Fellows, College guests, students, and staff.
- Deputise for the Head Chef when needed.
- Assist in supervising the Sous Chefs and manage kitchen resources efficiently, minimizing costs and energy usage.
- Follow Food Safety and Health & Safety regulations.
- Collaborate with the Head Chef to compile and submit food orders, ensuring proper stock rotation.
Food Preparation & Menu Planning:
- Assist with planning and developing cyclic menus.
- Contribute to the creation of signature dishes for functions.
- Promote the use of fresh produce and ensure dishes meet agreed recipes.
Food Service:
- Ensure excellent customer satisfaction in food preparation and service.
- Oversee food service areas, ensuring proper staffing, preparation, and presentation.
- Brief food service staff on menu content and allergens before service.
- Conduct regular checks during meals for availability, cleanliness, and presentation.
Staff Development:
- Work with the Head Chef to develop training plans for kitchen staff.
- Provide on-the-job training and develop staff to competition standards.
Other Duties:
- Support staff induction and complete progress reviews during probation.
- Record staff sickness and conduct appraisals as directed by the Head Chef.
- Assist with other duties as required by the Director of Hospitality and Head Chef.
Person Specification:
Qualifications:
- NVQ Level 2 & 3 in Professional Cookery
- Basic Food Hygiene Certificate
- Training in HACCP and COSHH
Skills & Experience:
- Strong leadership, organizational, communication, and customer service skills.
- Minimum 3 years in a similar role with HACCP knowledge.
- Experience in a College environment (desirable).
