Reporting directly into the Head Chef, the successful Sous Chef candidate will have experience in high-end restaurant or luxury hotel environments, demonstrating leadership qualities, culinary skills and menu development creativity within a top-tier establishment. Our Sous Chef will be preparing and cooking dishes for guests with high-expectations, and should be comfortable preparing fresh and premium ingredients such as truffles, caviar, oysters, wagyu and more. Experience in preparing and cooking hand-stretched pasta is preferred but not essential. In the absence of the Head Chef, the Sous will be in full command of the kitchen and must take ownership of the culinary operation. We also expect the kitchen number 2 to be comfortable with HACCP compliance as well as ordering and staffing rotas. This crucial role is a part of the Terra Mare leadership team, and imperative in ensuring the maintenance of our continued success.
We are searching for candidates who can start immediately, but open to a mid-to-late January 2025 start date also.
