Welcome to The Bear, a brand-new gastropub at the heart of Tattenhall. The Bear will blend the charm of a classic British pub with an elevated dining experience, offering a menu of refined la carte dishes, classic pub favourites, and simple yet delicious bar snacks. We are looking for a talented and drivenSous Chefto support our Head Chef in delivering exceptional food and leading our kitchen team.

The Role

AsSous Chef, you will play a vital role in the kitchen, acting as the Head Chef's second-in-command. You will oversee kitchen operations, ensure food quality, and lead the team in the Head Chefs absence. This is an excellent opportunity for an ambitious chef to contribute to an exciting new venture and develop their skills in a well-supported, high-quality kitchen environment.

Youll have the opportunity to work withbrand-new kitchen equipment, aseparate prep kitchen/washroom, and anexternal wood-fired pizza kitchen, giving you the perfect setup to create exceptional dishes.

Key Responsibilities

Kitchen & Food Quality

  • Assist the Head Chef in designing and executing a menu that balances classic pub dishes, refined la carte options, and high-quality bar snacks.
  • Ensure all dishes are prepared and presented to the highest standard.
  • Work with fresh, locally sourced ingredients to create outstanding food.
  • Maintain consistency in portion control, taste, and presentation.
  • Help develop and implement seasonal specials and menu changes.

Kitchen Operations & Compliance

  • Support the smooth running of kitchen operations and ensure efficiency during service.
  • Oversee food preparation, stock control, and kitchen hygiene.
  • Ensure full compliance with food safety and hygiene regulations (HACCP, allergen control, etc.).
  • Monitor kitchen cleaning schedules and maintain a clean and organised workspace.

Team Leadership & Development

  • Assist in training, mentoring, and developing the kitchen team.
  • Lead by example, ensuring a positive and professional kitchen culture.
  • Supervise kitchen staff and delegate tasks effectively.
  • Provide support and guidance to junior chefs and kitchen assistants.

Financial & Cost Control

  • Help manage kitchen budgets, food costs, and GP targets.
  • Work with the Head Chef to reduce waste and improve efficiency.
  • Assist in stock ordering and supplier management.
  • Ensure portion control and effective use of ingredients to maintain profitability.

Collaboration & Guest Experience

  • Work closely with the Head Chef and Front of House team to ensure a seamless dining experience.
  • Be confident in engaging with guests when required, providing insight into the menu and dishes.
  • Uphold the vision and values of The Bear to deliver a consistently outstanding experience.

What Were Looking For

  • A passionate and experiencedSous Chefwith a strong background in gastropub or restaurant kitchens.
  • Excellent cooking skills and a deep understanding of British cuisine and seasonal ingredients.
  • Strong leadership qualities with experience managing or supervising a kitchen team.
  • Good knowledge of food safety and kitchen compliance (Level 2 or 3 Food Safety preferred).
  • Ability to thrive under pressure and deliver in a fast-paced environment.
