Twelve Triangles is a well-established Edinburgh-based bakery, now entering its 10th year. We are known for our range of sourdough breads and pastries, made from locally and independently sourced ingredients. Our ethos of simplethings made well making everything we can from scratch and knowing where all our ingredients come from.
We are looking for a skilled and passionateHead Bakerto join and lead our bakery team. We are a close-knit team of 17 bakers working across two shiftsday and nightwith everything we make going into cold storage to slow the fermentation process before baking. We primarily work with UK flours and UK cultured butter, so a passion for high-quality ingredients and proper handling is essential. Twelve Triangles is a female-founded business, and you will work closely alongside the owners, Emily and Rachel.
Role Overview:
As the Head Baker, you will be responsible for overseeing the production of all baked goods, managing the bakery team, and ensuring consistent quality, cleanliness, and safety standards. This is a hands-on leadership position where you will work alongside your team during shifts. You will also be responsible for maintaining effective communication between the day and night teams.
You will have the support of an Operations Manager, who will oversee the smooth running of orders, rotas, holidays, and communication with the shops. This position is ideal for an experienced baker with strong leadership skills and a deep appreciation for quality local ingredients, who is eager to build on their knowledge with the support of an established business. A strong understanding of sourdough, UK grains, and fermentation is essential, along with the right attitude to support and guide your team to achieve their best and continue learning.
Key Responsibilities:
Bakery Operations:Lead the daily production of a wide range of baked goods, including breads and pastries, as well as components such as custards, jams, and frangipanes. Introduce new efficiencies in shift patterns, focusing on workflow and waste reduction. Troubleshoot issues such as mis-weighed recipes, over/under-proofed bread, and temperature fluctuations, and train the team to identify and resolve these challenges.
Team Management:Supervise, train, and motivate the bakery team, ensuring all staff are proficient in producing each product and understand not only how to follow recipes but also why they work.
Recipe Development:Implement new recipes, train staff on them, and work seasonally to make the most of available ingredients throughout the year.
Inventory & Stock Control:Oversee ingredient ordering, manage stock levels, and maintain relationships with suppliers.
Quality Control:Ensure consistent product excellence by monitoring and enforcing quality control procedures.
Health & Safety Compliance:Ensure adherence to food safety regulations, hygiene standards, and workplace safety protocols.
Scheduling & Planning:Organise baking schedules and work with senior management to plan production, particularly during peak seasons.
Key Requirements:
A minimum of 5 years of baking experience, with at least 3 years in a leadership or supervisory role in a bakery or similar environment. Experience in an artisan bakery working with sourdough bread for at least 3 years is essential, ideally with UK grains.
Exceptional knowledge of baking techniques, sourdough management, and pastry and lamination skills.
Strong leadership, communication, and team management skills.
Ability to work efficiently under pressure and manage multiple tasks simultaneously.
A keen eye for detail and a passion for artisan baking.
Flexibility with working hours, including early mornings, night shifts, weekends, and holidays as needed.
Strong knowledge of food safety and compliance with Environmental Health regulations.
A positive attitude, creativity, and a willingness to learn and grow within the role.
Experience with high-volume baking or running a bakery operation is a plus.
