Sous Chef

Location: Farnham

Salary: £31,000 per annum (Full-Time Equivalent), £28,000 actual per annum, depending on experience.

Hours: Monday to Friday 7.00am to 3.30pm (term time only)

The School is one of the leading, co- educational, independent Prep schools in Surrey situated in 50 acres of outstanding countryside in Frensham, Farnham.

The school prides itself on its inclusive approach, providing a comprehensive and stimulating educational experience for children aged 2 to 13 years old. Boarding is offered from Year 4 onwards.

The In-house catering department is responsible in delivering a wide and varied food provision for the School community, both boarding and day pupils. The department is managed by the Operations Manager, who is responsible for the Catering and Cleaning on site. The team consists of Head Chef, sous chef, pastry chef, front of House supervisor with 11 further members of the team.

The Role

The School is seeking a highly motivated Sous Chef to help deliver a quality catering service in line with health, safety, allergens and hygiene requirements.

Key Responsibilities

  • To help devise new and exciting menus for the staff and children (3-week cycle)
  • To provide balanced, nutritional, fresh, wholesome meals and snacks
  • To assist Head chef where needed
  • To prepare and cook daily food (breakfast & Lunch)
  • To make sure food is served on time
  • To make sure that methods of food preparation and presentation are to the school’s high standards
  • To always lead by example
  • To have attention to detail, finesse, and passion for producing, and presenting quality food
  • To ensure sufficient food is available at all times during the service
  • To be fully aware of allergens and diet requirements of staff and pupils
  • To deputise the management of the kitchen in the absence of the Head Chef
  • To avoid any unnecessary wastage, to observe proper portion planning and control and to act in a cost effective, responsible manner

Skills and Qualifications

Essential:

  • City & Guilds diploma/ BTEC HND on Professional Cookery
  • Good standard of education, numeracy and literacy
  • Previous experience of working in a catering environment
  • Willingness to undertake further training and learn new skills
  • Level 2 Food Safety Certificate

Desirable:

  • COSHH, Manual Handling, Fire Awareness, Level 3 food safety certificate
  • Previous experience of working in a school environment
