Effectively manage the day to day running of the 2 AA rosette restaurant and In room Dining. Responsible for the financial success of the outlets & for ensuring all KPIs are attained. Lead the team to continued success and grow the team through recruitment, training & mentoring. The Restaurant Manager will set high standards by leading the team by example. Day to day running of the department tasks include but is not limited to rostering, labour forecasting, revenue management, customer satisfaction, employee satisfaction, inventory, and supply management.

ESSENTIAL FUNCTIONS

? Responsible for smooth running, planning, managing and directing all food and beverage service functions in the Restaurant and In-Room Dining

? Have overall responsibility for ensuring the Assistant Managers and Senior Waiters effectively plan and run the daily operations within the outlets

? Assist guests to ensure their needs are met and expectations are exceeded by responding appropriately to guest needs during hours of operation

? Oversee the smooth running of any meetings or events booked in these areas.

? Responsible for of ensuring that all SOPs linked to the Restaurant and IRD are followed and adhered to and that all approved newly created SOPs are implemented accordingly and within the stipulated timeframes.

? As Restaurant Manager you will be passionate about training and developing your team.

? To establish a sound professional relationship with the kitchen

? Direct management of the Sommelier to ensure that all wine lists are correctly updated with current pricings and that upselling targets are agreed to maximise revenue.

? Responsible for the maintenance of all equipment, cleanliness of the outlet, and the overall upkeep of all hygiene requirements that ensure both restaurant and IRD meet with all health and safety regulations. This includes developing cleaning schedules and overseeing and following up on execution.

? Display proper and safe use of all equipment

? Be knowledgeable on the menus and all the service standards in the Restaurant, Bar & In room dining.

? Conduct appraisals in line with guidance given from the F&B Director, Human Resources and in line with completion deadlines.

? Lead the team by creating an environment in which direct reports can take responsibility and authority for their own work and development

? Prepare and regularly update Departmental Training Manual

? Assist with the preparation of Job Descriptions for direct reports

? Display an understanding of the impact that menu choice has on productivity and profitability

? To generate new ideas for service and products that will maintain a competitive and leading edge over our Competitive set

? Any other task required to contribute to the workflow of the department or resort.

QUALIFICATION STANDARDS

? Must be able to communicate effectively in spoken and written English.

? Must have previous experience of working in luxury hotel environment at Head Waiter or Assistant Outlet Manager Level or above

? Degree/HND or equivalent required

? Ability to analyse financial information and prepare budget and outlet goals and to monitor and control payroll and other costs preferred

? Must have the ability to focus and maintain attention to performance of tasks and to work and complete assignments on time despite frequent stressful, emergency, critical or unusual interruptions.

? Must be able to lead a team by creating the right example, training, motivating and mentoring to achieve desired ends

? Must have the ability to converse calmly with irate guests, superiors and subordinates in intense emotional situations.

? Comprehensive computer skills preferred

? Intermediate or Elementary Food Hygiene Certificate desirable

? Scottish Personal License Holder desirable

Education:

Educated to university level in Hospitality or Hotel Management or equivalent
