Head Baker

or the first time since we opened the bakery in 2020 we are looking for a new Head Baker to inspire our bakery team.

About Us:

Bakeri Baltzersen is a wholesale and retail bakery based just outside Harrogate in North Yorkshire. We bake 7 days a week and deliver to around 170 wholesale partners spread across West and North Yorkshire. We supply into our retail shop/cafe locations in Harrogate and Wetherby.

We use a combination of Wildfarmed and Moule Bie flours, Estate Dairy Butter, Acorn Dairy Organic Milk, Cold-Pressed Yorkshire Rapeseed Oil and lots of other great ingredients.

We hope to open more retail sites over the next few years to be able to offer more of our products direct to consumers.

Job Summary:

As a Head Baker, you will play a key role in the success of the bakery.

You will support the Head of Pastry and Head of Bread with the daily baking operations, ensuring the production of consistently high-quality products, offering technical and process focused expertise and mentoring the wider team.

The ideal candidate is a time-served bakery professional with a deep knowledge of baking techniques and a passion for creating exceptional baked goods at scale.

Key Responsibilities:

• Lead and manage a combined bakery team of 17 bakers and assistants, providing training, guidance, and support.
• Facilitate the production of breads, pastries, cakes, cookies and other baked goods, ensuring consistent quality and presentation.
• Develop new recipes and improve existing ones, staying up-to-date with baking trends.
• Line manage the section heads and assist with hiring for all production focussed roles within the bakery.
• Ensure all baked goods meet health and safety standards, including proper food handling and storage.
• Manage supplier relationships and identify new suppliers.
• Collaborate with the management team to meet production goals and drive business growth.
• Manage costs and minimise waste while maintaining the highest product standards.
• Liaise with the logistics team to facilitate a smooth transition between the bakery and logistics teams, who share the same space, each evening and the following morning.

Qualifications:

• Proven experience as a Head Baker or Assistant Head Baker in a similar role.
• A minimum of 5 years working in an artisan bakery environment.
• In-depth knowledge of baking techniques (including long fermentation and lamination) and ingredients.
• Strong leadership and team management skills.
• Creative and innovative approach to baking.
• Excellent time management and organisational skills.
• Ability to work in a fast-paced environment.
• Attention to detail and commitment to producing high-quality products.

Shifts

We are open 7 days/week with shifts in various patterns from 6am to 10pm. As Head Baker you would be expected to be able to cover shifts if required but you will most often work in a supervisory role offering help and guidance where it is needed most.

There is no access to the bakery site via public transport so applicants must have the ability to get to work by their own transport.

Hours

This position is a full-time post offering a minimum of 40 hours per week.

Pay

The pay for this role is £41,163 PA.
