Summary
TheAthenaeumis a private members institution in Liverpool city centre, founded 1797 to ensure the up-to-date provision of newspapers and pamphlets, and to create a library for the use of the merchants and professional men of the city. This required subscribers to take shares in the 'Institution' and hence the names 'Proprietor' are used rather than 'club' and 'member'. Early Proprietors of the club included "entrepreneurs, slavery-abolitionists, free-thinkers, and political radicals, who regarded themselves as the commercial and intellectual champions of Liverpool".
Today, it proudly continues to function as a private members institution, its Proprietors now include men and women with membership limited to 500people. The Athenaeum is open for the use of Proprietors each weekday and includes social programmes and special groups of interest for history, literature, music, and for wine tasting.
The building may be hired for use by Proprietors, or by outside individuals and groups.
The role
You will be a dynamic, self-motivated Food & Beverage profession with flair, energy and passion for beverage, who will create superior beverage experience for our members and guests. Through your effective innovation and passion, you will create drinks and menus that place the Athenaeum, Newsroom bar, as a perfect place for members and guests to enjoy a drink within an elegant historic interior and intimate setting with lamps and roaring fires. You will create a stunning signature cocktail list that focusses on seasonality with a bespoke diverse selection of spirits and seasonal fine wines as part of the bar portfolio for member to enjoy. This is a front of house role, working directly with customers, and we are looking for a great personality to be the face of the bar with a good knowledge of spirits, wine and cocktails with excellent customer service skills. Extending prompt service to all customers, treating member and colleagues in a courteous manner. Being able to keep to stock records, order and relationships with approved suppliers, maximizing revenue.
This role will be & hours per week as a permanent contract.
You will be responsible for: With the House Manager as your line manager , you will work in partnership with all Food & Beverage staff to execute the smooth and flawless operation of the Newsroom, Dining Room and private events. Adhere to both the Club rules and licensing authority pertaining to serving alcohol beverages and intoxicated guests, You will take ownership of the Newsroom, Wine Servery and function bars serving members and guests to the highest standards of food & beverage offerings, including the Newsroom menu and afternoon teas. Improving our service offer to achieve our Service Level Agreements & Targets for delivering the day-to-day operations to improve Proprietor offer and experience at the Athenaeum
What you will deliver: Its about leading and delivering great Proprietor and guest experience, through role modelling an exceptional service and working knowledge of all products served, menu items, in order that all details of service are performed by the servers to expected standards so everyone receives the highest quality of service. welcome and goodbye. Supporting Proprietor engagement and maintaining the highest standards of presentation and welcome. Working in close cooperation with other departments to ensure a seamless experience for Proprietors, their guests, and all visitors. You will have delegated tasks within the Food & Beverage team to support the delivery the Athenaeum business plan.
Its about great leading people: Creating a great place for the Food & Beverage service team to work in. With support from the House Manager, you will role-model the service-led behaviour for staff to practice and leading the team to deliver exceptional service. You will ensure that the service team are enthusiastic, developing them, delivering strong performance by giving regular feedback. Train the service team to ensure beverage knowledge and service levels are to standard, contribute to team briefings as required, and lead staff training sessions for all beverage products. Cocktail mixing and upselling, delivering feedback when needed, to improve service. Ensure the service team works towards the timely set up and close completion of all bar areas, in line with opening hours.
Its about being curious: Having a sincere interest in our Proprietors, members, guests and staff, their motivation, their mind set and their personal context when they are in Institution. Taking the time to understand all of them, ensuring they are getting what they need from their time in the Club and that the details of service performed by the service team exceed their expectations. Review and respond to Proprietor requests and feedback in a timely manner.
It's about working safely : Ensuring that you and others comply with the Athenaeums processes and procedures to minimise risk, confidently speaking up and stepping in when issues occur. Recognising the importance of making sure all Proprietors, visitors and all users enjoy or work in the building safely and securely, ensuring compliance with relevant legislation and Athenaeum instructions.
It's about good service :Leading by example, you will be responsible to ensure we provide the highest level of hospitality when preparing and serving beverages. Delight the Proprietors by offering trend setting innovative products and service, that contribute to sales activities maximising revue. Conduct training sessions on beverage poring practice =, cocktail mixing, presentation and up-selling. Empower staff to understand personalaccountability, review performance and make changes to help prevent poor service problems.
Its about standards of presentation: Take the lead to ensure that the full bar operations in the Newsroom and Wine Servery are maintained to the highest standard of presentation so there is individual ownership of service and presentation of facilities in line with Athenaeum guidance. From modelling our traditions, culture, and ethos as a welcoming face, always working with others to make sure our building looks its very best and pride in ensuring the Athenaeum looks its very best for everyone.
Scale & scope of the role.
Reports to: House Manager, who is the Food & Beverage service lead.
Financial Responsibility: The role has no budget responsibility but requires you to deliver agreed sales & cost target, there may be some cash handling. You will ensure that the service team understand that their individual accountability for checks to be closed, and that Proprietor billing is accurate. Prepare monthly stock audit and accurate stock orders to achieve profitability through effective utilisation of all resources. Monitoring and managing resources, taking action to keep sales on target, staff performance, rotas and payroll costs.
Line Management: There is supervisory responsibility with this role in managing the service team members and agency staff when working in the Newsroom. You will be involved in planning and producing monthly rotas. Setting and maintaining service standards and procedures.
Area of Impact:The role is a lead member of the Food & Beverage service team with day-to-day responsibilities for delivering exceptional service to all Proprietors and guests. Able to provide leadership to guide and influence individual service team members, efficiently manage all bar operations, stay current with all seasonal trends or drink popularity, creating own recipes when required. Flexibility and good teamwork skills, where able fill in the gaps when needed, critical skills in maintain stock level, as part of an overall team communicate with all the service team and kitchen staff to ensure the Newsroom and Wine Servery are run efficiently. Work closely, with all teams as needed.
Nature of impact: Direct impact on the quality of service and interaction with Proprietors, and guests extending a prompt high standard service and experience. Working closely, collaboratively, and flexibly with all other teams within the Athenaeum. Direct impact on reputation, Proprietor relationships and influences service performance and measures and revenue.
Internal/External Relationships: Interacts with all Proprietors and visitors to the Athenaeum. Key relationships with other Athenaeum teams, Membership Services, Food & Beverage catering and service and facilities teams. Key relationships with the House Manager, Hospitality Manager, Proprietors, guests and Concierge
Knowledge, skills & experience needed.
Good practical experience as a Senior or Head Bartender in a busy high-end restaurant or hotel environment.
Knowledge of cocktails, spirits and wines is essential to thus role.
Able to lead, train and develop the Service Team to deliver Standard Operating Procedures.
Being able to keep stock records, order from suppliers and building positive relationships
Take ownership of the Newsroom and Wine Servery to improve standards of the offering, presentation and beverage service to maximise revenue.
Able to handle complaints and difficult situations, showing initiative and boundaries, whilst modelling our values.
Confident to escalate when others fail to model our values or additional support is needed.
Good team worker
Flexible and adaptable, and willing to grow experience and skillset.
Proven self-motivator with an ability to work with varying and changing pressures.
Numerate with experience of cash handling and understanding reports.
