The Hurlingham Club is looking for a Restaurant General Manager to join the team at their new Brasserie, scheduled to open in June 2025. The Brasserie will be offering modern British cuisine during lunch and dinner service for members and their guests.

Situated in 42 acres of landscaped grounds adjacent to the River Thames in Fulham, The Hurlingham Club is recognised as one of the world's finest private member clubs.

Since its opening in 1869, The Hurlingham Club's croquet and tennis lawns, botanical gardens and stately Georgian Clubhouse have made it a sought-after destination for exclusive sporting and social activities.

The Role

As the Restaurant General Manager, you will work an average of 48 hours per week, as per the rota, with any additional hours as required to fulfil the role. This will include early, late, and weekend shifts.

Reporting to the Director of Food & Beverage, you will play a pivotal role in mobilising the new restaurant, overseeing pre-opening coordination, staffing, training, and supply chain readiness. You will partner with the Executive Head Chef to establish high standards of consistency, quality, and service across all member dining experiences. Your leadership will be crucial in creating a seamless and memorable opening, setting a strong operational foundation for the restaurant's success. A key aspect of this role is prioritising the member experience, actively engaging with feedback from members to continually enhance service quality and satisfaction.

Key responsibilities

  • Oversee and direct seamless operations within The Brasserie, ensuring highly efficient, high-quality service.
  • Collaborate closely with the Head Chef to align on service standards and menu offerings.
  • Ensure compliance with all financial, health, and statutory requirements.
  • Lead, inspire, and set a strong example for the Brasserie team.
  • Recruit and maintain appropriate front-of-house staffing levels to support service excellence.
  • Develop and train all Brasserie staff to ensure skills growth and consistent quality.
  • Foster team development through mentorship and implement a clear succession strategy.
  • Ensure that all team members uphold high service and operational standards.
  • Strictly uphold health, safety, hygiene, risk assessment, COSHH, and manual handling standards as mandated by legislation, company policies, and external auditors.

  • Experience in mobilisation and understanding of critical path processes to ensure efficient setup and timely execution of restaurant operations.
