About the Role
As Restaurant General Manager, you will be responsible for the overall operation of both breakfast service in the first floor Gallery, and also for Café Royal Grill, our historic ground floor restaurant which serves lunch, traditional afternoon tea and dinner. Reporting to the Director of Food & Beverage, you will lead an experienced team of professionals to deliver an exceptional and seamless dining experience, maintaining the highest standards of service and luxury hospitality.
You will be a hands-on leader, demonstrating flexibility and adaptability in managing service delivery while inspiring and guiding a talented team. Passion, confidence, and a deep knowledge of the London restaurant scene will be essential to mastering the elegant and refined service that defines Hotel Café Royal.
Key Responsibilities
- Lead and manage daily operations of The Gallery and Café Royal Grill, ensuring smooth and efficient service.
- Provide fine yet unobtrusive service, training the team to uphold these high standards.
- Stay informed about trends in the London dining scene, implementing innovative ideas to enhance guest experiences.
- Maintain an exceptional knowledge of food, wine, and beverages, ensuring the team is well-trained and knowledgeable in all aspects of F&B.
- Oversee financial performance, including revenue management, cost control, and P&L reporting.
- Play an active role in budget planning, analysing trends and making recommendations for business growth.
- Manage recruitment, scheduling, and payroll, ensuring a well-balanced and motivated team.
- Implement and enforce Health & Safety policies and procedures in compliance with hotel and industry standards.
- Focus on upselling and maximising revenue with a focus on labour productivity and payroll management.
About You
- Proven experience in luxury hospitality or high-end restaurants in a managerial role.
- Strong leadership and people management skills, with a passion for training and developing teams.
- Deep understanding of F&B operations, with expertise in wine, beverages, and food pairings.
- Exceptional guest service skills, with the ability to anticipate and exceed guest expectations.
- Commercially astute with experience in budget management and P&L analysis.
- Knowledge of Micros and Sevenrooms or similar hotel/restaurant management systems is a plus.
- Ability to work flexible hours, including weekends and holidays, in line with the demands of the role.
