Kokoro is a beloved Korean-Japanese hand-made sushi and hot food takeaway restaurant. Since opening our first branch in Kingston in 2010, we have grown to over 75 branches across the UK. Our brand is known for providing affordable, high-quality sushi in a trendy, fast-casual Asian dining experience.

We are expanding our team and seeking a Deputy Restaurant Manager at our Wimbledon branch. If you have a passion for the restaurant business and have experience in Asian cuisine, we want to hear from you.

Responsibilities

As a deputy branch manager, you'll be responsible for operational, financial and people management. You'll need to:

Carrying out general duties performed by hall and kitchen staff

Maintaining the food and products served to meet the required standards.

Organize stock and equipment, order supplies and oversee building maintenance, cleanliness, and security

Plan and work to budgets, maximize profits and achieve sales targets set by head office

Recruit new staff, and train and develop existing staff

Coordinate staff scheduling and rotas, and motivate and encourage staff to achieve targets

Maintaining safe working conditions

Ensure standards of hygiene are maintained and that the restaurant complies with health and safety regulations

Ensure high standards of customer service are maintained, and handle customer complaints and queries

Handle customer complaints and queries

Implement and instil in your team company policies, procedures and ethics

Implement branded promotional campaigns from head office, including the handling of point-of-sale promotional materials, or devise your own promotional campaigns

Prepare reports and other performance analysis documentation

Report to, and attend regular meetings with area managers or head office representatives

Working closely with management to meet revenue objectives

Implementing appropriate strategies to resolve adverse trends and improve sales

Establish relationships with the local community and undertake activities that comply with the company's corporate social responsibility programs.

You may be occasionally required to undertake other duties in addition to normal duties in line with the needs of the business.

Qualifications & Experience

You don't usually need a degree to work as a sushi shop manager. We prefer a range of relevant qualifications available at various levels, including degree and postgraduate level, in areas such as:

Business studies or management

Catering

Hospitality and hospitality management

Leisure management.

We also prefer more than 2-year experience in any customer-facing role and managing a team.
