For our patisserie in London, Mayfair district, we are looking for a Chef.

What youll do

You will be in charge of the organization and coordination of the kitchen department, guaranteeing that products and dishes on the menu comply with Marchesi standards of quality, image and excellence. You will be responsible for the monitoring hygiene, health and safety regulations relating to the departments activities.

In particular, your activities will include:

Use manual skills to take care of the details of each plate with precision, make garnishes and plates in alignment with corporate image and presentation standards
Work on recipe development for new dishes accurately and precisely, tracking the quantities of ingredients used
Use the different production techniques (cuts, cooking..) using appropriate equipment and tools
Know the correct conservations of food by learning the different techniques and applying control procedures on the state of conservation
Manage order and the correct organization of the warehouse with attention to the optimization of stock according to the sales trend
Use the tools and equipment for each process and work safely with them, taking care of their maintenance and cleaning
Organize his single workstation respecting shared spaces
Manage preparations in terms of cleaning, evaluation of the freshness of raw material, choice and dosage of ingredients
Support the pastry chef in managing pastry production
