  • Reporting to: Chef Patron, Head Chef, Sous Chef

Overall Objectives

Plan, prep, set up, and provide quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications. Maintain organization, cleanliness, and sanitation of work areas and equipment.

Chef de Partie Key Tasks Summary

  • Quality Control: Taste and check all items during service to ensure they meet menu standards.
  • Menu Development: Assist in developing seasonal menus that use the best ingredients.
  • Stock Management: Ensure depleted stock items are reordered promptly.
  • Equipment Maintenance: Properly use, maintain, and report any issues with kitchen equipment.
  • Professional Presentation: Report to work in a clean, laundered uniform and meet company presentation standards.
  • Preparation and Production: Oversee prep work and ensure all dishes are prepared according to recipes and yield guides.
  • Cleanliness and Organization: Maintain cleanliness and organization of workstations and ensure proper breakdown and closing duties.
  • Communication: Coordinate with the Head Chef during busy periods to ensure smooth service.
  • Cost Control: Minimize waste and manage food costs within company guidelines.
  • Training and Development: Assist in training new staff and participate in ongoing professional development.
