Specialist wine merchant Fables & Company is looking for experienced, disciplined and communicative chefs to join the in a full-time position as a Chef, in a small, vibrant kitchens of Plume, Finch and Quill.
You are a Sous Chef or above with substantial casual restaurant experience, experience in ordering plus managing orders. You are excited by ingredients and sustainable suppliers, working with them and our group executive chef to come up with new items. But above all you are a team player in the fast paced wine bar.
Full-time position (35 hrs/week);
- You will have full scope to create and be a part of continuing to build an ambitious group of venues.
- Role will be spread across Monday - Sunday with shifts either starting at 11am or 4pm, with no shift later than 11pm.
- You will lead a tight kitchen and fine-tune efficient kitchen systems
- You will be a member of a caring, respectful team with a sustainable work schedule & a high quality of life
- You will be in charge of overseeing and maintaining the kitchens hygiene protocols
- You are expected to keep open communication with owners, with all staff members and lead with a sense of compassion and inclusivity
About us:
Established in 2011, Fables & Company is an importer of fine sparkling & still wines from around the world. In 2018 it launched what would become Plume, its first wine bar and events space, offering a large rotating list of wines & cocktails alongside a sharing plates menu led by the seasons, exotic ingredients and creativity. The space hosts events and offers an array of canapés and feasting menus.
The venue, appearing deceptively small, is known by word of mouth to have an unexpected wine focused speakeasy on the lower floor of Charles Dickens historic office, where he serialised tales Great Expectations, A Tale of Two Cities' and various Christmas tales in his Covent Garden newspaper.
