Akara London is looking for a Grill Chef de Partie. He will be responsible for managing the grill section in the kitchen, ensuring all grilled dishes are prepared to the highest standards of quality, taste, and presentation. This role requires a skilled chef with expertise in grilling techniques, a strong understanding of food safety practices, and the ability to work efficiently in a fast-paced environment. The Grill Chef de Partie works closely with the rest of the kitchen team to deliver exceptional dining experiences.
Key Responsibilities:
- Grill Station Management: Oversee the day-to-day operations of the grill section, including preparing, cooking, and presenting grilled items such as meats, fish, and vegetables.
- Food Preparation: Ensure all grilled dishes are prepared according to the restaurant's menu specifications, with an emphasis on consistency, quality, and timing.
- Cooking Techniques: Master various grilling techniques and use of the grill to produce dishes that meet the restaurant's high standards of flavor and presentation.
- Quality Control: Maintain strict quality control over grilled items, ensuring they are cooked to the correct temperature, seasoned well, and presented beautifully.
- Menu Contribution: Collaborate with the Head Chef and Sous Chef in creating and refining menu items, particularly those centered around the grill.
- Team Leadership: Supervise and train junior kitchen staff in the grill section, ensuring proper use of equipment and adherence to kitchen standards.
- Inventory Management: Monitor inventory and stock levels of grill-related ingredients and supplies, ensuring that orders are placed as needed to avoid shortages or overstocking.
- Cleanliness & Hygiene: Maintain a clean and organized grill station and ensure that all health and safety regulations are followed, including safe handling of raw meats and the proper cleaning of grilling equipment.
- Operational Efficiency: Work efficiently to prepare and deliver food during busy service hours, ensuring that grilled items are cooked and served in a timely manner.
Key Skills & Qualifications:
- Experience: Minimum of 3-4 years of experience as a Grill Chef, Chef de Partie, or similar position in a professional kitchen, with experience handling grill stations and working with grilling techniques.
- Cooking Skills: In-depth knowledge of grilling techniques, including but not limited to grilling meats, seafood, and vegetables, as well as knowledge of marinades and seasonings to enhance flavor.
- Leadership Skills: Ability to supervise and train junior staff effectively, ensuring they follow kitchen procedures and maintain high standards of performance.
- Attention to Detail: Strong attention to detail regarding food quality, portioning, presentation, and cleanliness of the grill station.
- Time Management: Ability to work under pressure and prioritize tasks efficiently during busy service hours, ensuring dishes are delivered on time.
- Health & Safety Knowledge: Understanding and adherence to health and safety regulations, particularly those related to food safety and the safe operation of grilling equipment.
