Northcote Saviour (Opening Mid November 2024) is an independently operated neighbourhood pub for the local residents, businesses, and visitors to the area alike.

Churros and coffee for breakfast, small plates & salty snacks to graze on, with quality beers, wines and classic cocktails to accompany them. Were looking forward to serving Clapham with our friendly, professional and relaxed service.

The Role Head Chef

The Northcote Saviour is looking for a Head Chef who can bring their flair, and knowledge to a small enthusiastic team with the ability to deliver an eclectic small plate/tapas style offering to a mixed social crowd. As the Head Chef you will create a Mediterranean inspired menu that will be the perfect accompaniment to a carefully crafted drinks list.

You will lead your team with your extensive experience, and deliver an unfussy, accessible food offering that our guests will return for time and again.

Your Main responsibilities will include:

Operations

  • Be a presence during service
  • Ensure the kitchen is stocked, and the menu is deliverable at all times
  • Ensure GP is delivered to budget or better.
  • Motivate and encourage your team.
  • Understand sales reports to understand customer habits, and par levels
  • Ensure the food offering is in keeping with the values and standards of the business
  • Scheduling in line with sales trends and forecasts, and maintaining a healthy Labour cost within your department
  • Demonstrate a working knowledge of menu costings, including seasonality, and market prices

Compliance

  • Maintain records (fridge temps etc) to comply with EHO standards
  • Ensure a clean appearance, hygiene and uniform standards of your team
  • Ensure all team members comply with food hygiene, correct storage, COSHH, HACCAP and other regulations and to maintain a 5 Star EHO Scores on the Doors rating.
  • Complete and regulate all opening and closing duties.

Skills and experience

We are looking for someone who has worked within a quality fresh food operation specializing in small plates. You may currently be a Sous Chef looking for a first opportunity as a Head Chef, or a Chef who has worked in a premium restaurant environment, but would like to work in more of an independent neighbourhood operation
