What Youll Do:

  • Oversee the daily operations of the Pastry section, working closely with the Executive Pastry Chef to ensure smooth workflow and exceptional service delivery.
  • Manage and motivate the brigade, conducting daily briefings and ensuring staff receive ongoing training and support to achieve their potential.
  • Maintain the highest food standards by ensuring recipes are consistently followed, dishes are perfectly presented, and customer expectations are exceeded.
  • Work with the Executive Pastry Chef on recipe development, costing, ensuring creativity and cost-effectiveness.
  • Manage stock control, budgeting, and food cost to meet targets, all while minimising waste and ensuring FIFO procedures are followed.
  • Ensure compliance with all health and safety regulations, maintaining a clean, safe, and productive environment.
