Job Summary:

  • Be responsible for preparing, baking and finishing all pastries, baked goods and other specified goods in accordance with the Company's quality standards and specifications;
  • maintain the organisation high standards and ensures total compliance with cleanliness and sanitation standards with regards to work areas and equipment.

Duties of a Head Pastry Chef:

  • Comply with and fully understand the laws and regulations regarding licensing, food safety, health & safety, fire equipment and fire training.
  • Maintain complete knowledge of and comply with all policies and procedures as the Company may put in place from time to time.
  • Liaise with the Head baker or his Assistant to understand assignments, anticipate business levels, changes in the menu and other information pertinent to his job requirements.
  • Complete all opening duties to include (but not limited to) setting up of workstations with regard to mise in place, tools, equipment and supplies according to standards.
  • Inspect the cleanliness and working condition of all tools, equipment and supplies, ensuring that everything complies with standards.
  • Establish priority items for the day.
  • Organise & check production schedules.
  • Daily order all the ingredients for the production and inform their Assistant and the Production Manager of any supplies needed for the day's tasks.
  • Ensure that all perishable items are stored quickly and efficiently thus avoiding unnecessary quantities being held within the pastry areas, always ensuring complete utilisation of all items with minimal wastage.
  • Create, prepare, produce and bake pastries, baked goods and other specified goods for the bakeries and wholesale customers following recipes and yield guides according to department standards.
  • Create new recipes, with their team and in conjunction with the Production Manager and CEO.
  • Enforce high standards of hygiene and sanitation.
  • Adhere to the strict policies regarding personal grooming and hygiene.
  • Ensure at the end of the working day that all areas are fully cleaned down.
  • Label, date and rotate items stored in all products and ingredients.
  • Test and train the new pastry team members to the company's standards.

All these tasks will conducted under the supervision of the Company Production Manager, to whom the Head Baker will directly report.
