The role of the assistant head baker is to work in partnership with the head baker to ensure the baking team can perform their roles to the best of their ability in a safe and positive environment, creating awesome products for our bakery, cafe and wholesale customers.
The main responsibilities include, but are not limited to:
Prepare and bake bread and pastry items as required on daily recipe sheets
Achieve consistent quality of baked goods by altering processes or recipes in response to changing conditions eg. weather and raw materials fluctuations
Ordering of flour and bakery wholesale ingredients
Develop new products to be added to the bakery offering and manage the implementation within the baking team and FOH team.
Deliver hygienic and efficient production and presentation of all food products sold at the bakery
Follow the bakerys food safety and food hygiene policy at all times
Maintain full product knowledge of our bread and relevant pastry items to relay to customers
Ensure the bakery meets the highest standards and expectations in all aspects of product quality
Offer suggestions for improvements (for both products and ways of working) based on feedback from customers, colleagues and from your own experience
Ensure the bakery is kept to a high standard of cleanliness
Write the monthly baking team rota.
Support the head baker finding cover for sickness and holiday.
Take on head baker responsibilities in their absence (holiday and sickness) - a handover would be provided.
Implement training plan when recruiting new team members
Assist in the recruitment of new members of the team
Maintain and develope the positive, hard working culture of the team whilst also looking for ways to improve ways of working, using your experience.
