Located in the heart of Soho,Underbelly Boulevardis a live entertainment venue for music, cabaret, variety and comedy, comprising of a 200-capacity cabaret and music venue, a studio for hire, daytime hire for events, readings and workshops, a bar and a restaurant.

Job Summary

We are seeking a dedicated and experienced Bar and Restaurant Manager to lead the in-house bar operations and oversee the service element of our restaurant. You will be responsible for managing the bar team, ensuring exceptional customer service, and optimising bar operations. While the food in the restaurant is provided by a third-party, you will collaborate closely with them to ensure a seamless guest experience. You will have full engagement and involvementin back-office operations but also the ability to be a hands-on manager, leading from the front.

Key Responsibilities

  • Bar Management:
    • Oversee the day-to-day operations of the in-house bars, including inventory control, ordering, stock management, and supplier relationships.
    • Develop and maintain an innovative drinks menu, including cocktails, wines, and spirits, in line with the venue's identity.
    • Ensure compliance with licensing regulations, health and safety standards, and food hygiene laws.
    • Manage bar staffing levels, schedules, and recruitment to ensure smooth operation, even during peak periods.
  • Restaurant Service Management:
    • Lead and supervise the restaurant service team, ensuring high standards of service throughout the restaurant and bar.
    • Act as the key point of contact between the third-party food provider and in-house staff, ensuring seamless service and a unified guest experience.
    • Handle guest complaints and feedback, ensuring any issues are resolved efficiently to uphold the venues reputation.
    • Train staff on service techniques, menu knowledge, and guest interaction to enhance the overall dining experience.
  • Financial & Operational Responsibilities:
    • Monitor and manage bar and service budgets, including staffing costs, beverage costs, and overall profitability.
    • Work with the General Manager to set financial targets, ensuring bar revenue and profitability goals are met.
    • Generate and analyse sales reports, identifying areas for improvement and implementing strategies to enhance revenue.
    • Implement and maintain systems to ensure accurate stock-taking and waste reduction.
  • Event Support:
    • Collaborate with the Events Sales Manager to plan and execute bar offerings during live shows and special events.
    • Ensure smooth bar operations during high-traffic periods, including performances and private functions.
  • Team Leadership & Development:
    • Recruit,onboard, induct, and train new employees into the company.
    • Inspire, motivate, and lead the bar and service team, fostering a positive working environment.
    • Conduct regular staff training sessions on product knowledge, service standards, and health and safety.
    • Support team members in their personal development and career growth within the company.
  • Other Duties:
    • Keep up to date with developments in the hospitality industry.
    • Attend regular company meetings.
    • Contribute to the venues policies and procedures.
    • Any other duties as reasonably required.

Qualifications & Skills:

  • Proven experience as a Bar Manager, Restaurant Manager, or similar role in a busy venue, ideally with a background in both bar and restaurant settings.
  • Strong leadership and team management skills, with the ability to motivate and develop a diverse team.
  • Exceptional customer service skills, with a focus on delivering a premium guest experience.
  • Excellent organizational and time management skills, with the ability to manage multiple priorities in a fast-paced environment.
  • Solid understanding of financials, including budgeting, cost control, and sales analysis.
  • Knowledge of health and safety, food hygiene, and licensing regulations.
  • Strong communication skills, both written and verbal, with the ability to build effective relationships with third-party partners and suppliers.
  • A passion for hospitality and creating memorable guest experiences.
