Senior Bar Manager - Fallow Restaurant
Salary - Up to £60k per year
Schedule - Full-time
Experience - Previous experience in managing at least one high-volume quality Bar(s) or Restaurant.
About Us - Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. The essence of this combination makes up much of Fallows DNA, where conscious culinary creativity meets hospitality experience and passion. What followed from this meeting were a series of sold-out residencies to establish Fallow as one of the most exciting restaurant concepts on the UK restaurant scene. Fallows permanent home in St Jamess market was established in November 2021 and has since attracted a string of awards including both the Marie Claire and GQ sustainable restaurant of the year and the Caterer award for best new restaurant.
About you -As the Senior Bar Manager at Fallow Restaurant, you will be responsible for overseeing all aspects of our bar operation, including crafting unique cocktails, creativity, and innovation, and ensuring exceptional service at the bar. You will lead a team of skilled bartenders, inspiring them to deliver memorable experiences for our guests.
Key Responsibilities:
- Manage the beverage operations of an award-winning premium dining, multi-outlet and high-volume central London restaurant.
- Develop and execute creative cocktail menus that reflect seasonal trends, seasonality and Fallows ethos.
- Work closely with the founders and senior managers, leading and motivating the bar teams in a hands-on manner ensuring consistent and exceptional service delivery.
- Curate a diverse and dynamic bar menu, ensuring exceptional quality and value for our guests.
- Train and mentor bartenders to deliver consistent, high-quality service and uphold company standards.
- Manage and maintain appropriate stock levels, ensuring timely ordering and efficient inventory management.
- Ensurecompliance with licensing laws, health and safety regulations, hygiene standards and maintaining a safe environment for staff.
- Collaborate with the culinary team to create food and beverage pairings that enhance the overall dining experience.
- Stay informed about industry trends and developments, and continuously seek opportunities for improvement.
Requirements:
- Proven experience as a Senior Bar Manager or similar role in a high-volume, upscale establishment.
- Extensive knowledge of spirits, wines, and cocktails, with a focus on creativity, sustainability and innovation.
- Strong leadership and management skills, with the ability to inspire and motivate a team.
- Excellent communication and interpersonal skills, with a customer-focused approach.
- Ability to multitask and thrive in a fast-paced environment.
- Familiarity with inventory management software and POS systems.
