We are seeking a talented and passionate Sous Chef to join our culinary team working in a 2 AA Rosette establishment. The ideal candidate will have a strong background in food production and preparation, with experience in the restaurant and hospitality industry. As a Sous Chef, you will play a vital role in supporting the Head Chef in managing kitchen operations, ensuring high standards of food safety and quality, as well as leading a team of kitchen staff. Your leadership skills will be essential in creating an efficient and harmonious kitchen environment.


Responsibilities

  • Assist the Head Chef in menu planning, food production, and inventory management
  • Be able to lead service in the absence of the Head Chef
  • Supervise kitchen staff, providing guidance and support to ensure smooth operations
  • Ensure all food safety and hygiene standards are maintained throughout the kitchen
  • Prepare and cook high-quality dishes according to established recipes and presentation standards
  • Preparation of meats, ?sh, produce, soups & sauces (including butchery and classical techniques)
  • Monitoring portion and waste control to maintain profit margins
  • Monitor stock levels and assist with ordering supplies as needed
  • Train new kitchen staff on food preparation techniques and safety protocols
  • Collaborate with the culinary team to develop new recipes and improve existing offerings
  • Maintain cleanliness and organisation of the kitchen area, including equipment and utensils

Requirements

  • Proven experience in food production and preparation within a restaurant or hospitality setting
  • Strong knowledge of food safety regulations and best practices
  • Excellent culinary skills with a passion for creating exceptional dishes
  • Demonstrated leadership abilities with experience supervising kitchen staff
  • Ability to work efficiently under pressure in a fast-paced environment
  • Strong communication skills to effectively collaborate with team members
  • Flexibility to work various shifts, including evenings, weekends and public holidays as required
