We are now recruiting aJunior Sous Chefto join our team atLea Marston Hotel.

As aJunior Sour Chef,you are responsible for taking control and accountability of the Kitchen departments while ensuring that standards are delivered at all times. We want adedicatedindividual who oozesconfidenceand shows genuinesincerityfor their team and every guest that walks through our doors.

Lea Marston has two restaurant outlets, our al a carte restaurant and our busy pub and restaurant.

Specifically, you will be responsible for performing the following tasks to the highest standards:

Assist in leading a team of 15 team members and creating a team environment which promotes good employee morale and ensures a high level of commitment and pride in the hotel.

Have a passion to bring a creative flare to menu changes and new dishes.

To assist in ensuring the profitability of food operations and Gross Profit management. This to include ensuring food stock-takes are carried out as required.

To assist with maintaining and constant improvement of departmental operating standards. This to include product/ menu development and menu specifications.

To control and monitor payroll costs for the department by allocating labour resources in line with forecasted business levels through payroll management.

To evaluate and act promptly and effectively on customer feedback received through any and all channels to achieve positive and consistent results.

Always maintain exceptionally high cleanliness standards in both outlets.

To mentor team members in the kitchen department who are undertaking an apprenticeship.

To assist with complying with statutory and Company requirements for Health and Safety, Food Safety, Risk Assessment, Licensing Laws, and other legislation and ensure your team are trained to meet the above requirements.
