Job Summary: Responsible for the daily in-house production of gourmet candy products. This position will also include front of house responsibilities, including serving product, upselling product & using the register systems.
Special Duties and Responsibilities:
- Production of all in-house produced chocolate products, fudge, candy/caramel dipped apples & fruit, popcorn, roasted nuts & other seasonal food items.
- Communicate production supply information & inventory weekly to Production Supervisor.
- Record all production items by date in Production Log Book. Keep inventory of all park produced items & control spoilage.
- Must be able to operate fudge kettle, candy apple machines and other food service equipment.
- Check that all major candy stores in the park are stocked, clean & Guest ready.
- Ability to merchandise candy products to look appealing & generate sales.
- Must be creative & innovative with candy design.
- Complete sales transactions on POS register system as needed.
- Maintain a clean and organize production area & comply with all state Food inspection regulations.
- Comply with all safety regulations in production area including wearing Personal Protective Equipment (PPE)..
Qualities of a Successful Candy Production Sous Chef:
- Must have 1+ years in Retail / Food Service. Education in Culinary Arts preferred.
- Must have friendly, outgoing, personable demeanor.
- Must work efficiently, sometimes independently in a fast-paced environment.
- Must have good time management skills & excel in multitasking.
- Must be a team player & adapt well to change.
Additional Job Requirements:
- Must be at least 18 years or older.
- Hands on Training will be provided for candy production & equipment operation
- Able to communicate effectively in the English language, including the ability to read, speak, and understand the English language
- Available to work flexible hours including early mornings, nights, weekends & holidays.
- Requires continuous sitting or standing, bending, eye/hand coordination, near vision, hearing, and speech. Requires frequent kneeling, manual dexterity, gross motor skills, and color definition. Requires some lifting, sitting, standing, walking, bending, eye/hand coordination.

Employment as a Candy Production Sous Chef is reliant on receiving passing scores on all required ServSafe Certification classes. For those 18 years of age and older, both ServSafe Alcohol and ServSafe Food Handler Certifications. All certification classes are supplied by the park.
