About the role

The primary objective of the Senior Bar & Restaurant Manager is to ensure that all the guests of the resort are consistently welcomed in a manner that upholds our high customer service standards. The F&B Manager will ensure that we deliver a service in a way that ensures that all responsibilities are fulfilled in the most efficient and customer-focused method possible, whilst managing communication between Front of House and the Kitchen. The key to the role is always directed to providing the primary customer service objective whilst managing the below responsibilities in such a way that positively affects the customer's perception or visit experience.

Duties will include, but are not limited to:

  • Manage all the front-of-house operations within budgeted guidelines and to the highest of standards.
  • To liaise with the kitchen to ensure the food and beverage operation works as one overall operation.
  • To work with the Duty Manager team to ensure that our bar is fully operational, and our customers are delivered the highest of customer experiences.
  • Identify customers needs and respond proactively to all their concerns.
  • Responsible for the high standards of presentation and organisation of front-of-house areas and storage areas.
  • Work with the People Manager to identify training gaps in their team, and ensure all staff have the adequate training to do their role and give our customers a first-class experience.
  • Manage communication with the Kitchen team to ensure that both departments operate cohesively and intuitively.
  • Ensure strict compliance with all relevant Hygiene, Health and Safety legislation and requirements.
  • To ensure all bar equipment and fittings must be in good working order and regularly cleaned and maintained as necessary.
  • In consultation with the GM and Resort Director, identify and implement innovative new ideas and methods to increase bar revenue. Conduct regular analysis to ensure that the resort is working with the most cost-effective suppliers ensuring that whilst overheads are kept to a minimum, we are maximising revenue.
  • Review products delivered to ensure that high standards are met and work with the Duty and General Managers to take up any shortcomings with suppliers.
  • To operate within efficient salary budgets year on year, tracking salary costs to provide input regarding new revenue streams and initiatives.
  • Constantly review the product range to ensure that all key quality standards are maintained, and we stay ahead of the curve of both the local and national trends.
  • To effectively respond to all e-mail communications promptly.
  • To work with the People Manager to ensure there is adequate recruitment, training, coaching and development of staff and to manage and motivate the team.
  • To work closely with the People Manager to manage all F&B staff have adequate inductions, their performance is monitored, and the resorts values are embedded within the team, along with being a role model and ambassador to the team.
  • Ensure that all additional staffing requirements are within the confines of current budget constraints by working with the Senior Management Team.
  • By working with the People Manager, you will ensure the provision of adequate training and instruction of all F&B staff should be carried out as required. You will be responsible for the direction and control of all F&B staff and make sure that they uphold uniform and conduct standards as they represent the culture and values of the business.
  • Make sure the resort and staff meet all licensing legislation that will apply from time to time.
  • Work with the People Manager to champion a training culture within the F&B team to ensure succession planning and a culture that exceeds the very best the industry has to offer.
  • Develop an environment of openness and trust, with constant feedback and performance coaching.
  • Manage Staff Performance, including the appraisal process and all training needs and records.
  • Provide two-way communication and nurture an ownership environment with an emphasis on motivation and teamwork.

About you

Youre an experienced and highly credible hospitality manager, specialising in both busy bars and restaurants with a strong track record of success in either premium resorts, hotels or successful F&B venues either at a similar level currently, or someone ready for the next step in their career.
