Street Food Kitchen Manager

About Us: Harajuku Kitchen started as a Japanese street food stall in Edinburgh and has evolved into a renowned, award-winning restaurant. Our passionate chefs serve authentic Japanese cuisine, and we're now part of the vibrant Edinburgh Street Food scene, filled with Scotland's best independent traders.

Role: As we expand, we are seeking a Street Food Kitchen Manager to help us make people happy with delicious Japanese food. This role is both customer-facing and back-of-house focused, requiring strengths in both areas.

Responsibilities:
  • Oversee all kitchen operations, including food production, safety, and cleanliness.
  • Collaborate with Owners and Management to create menu items, including costing, pricing, and portion control.
  • Ensure all food items are stored, prepared, and served per recipe and portion standards.
  • Order kitchen materials and ingredients based on menu and market demand.
  • Ensure preventive maintenance measures are followed and manage maintenance requirements.
  • Maintain adequate stock levels and conduct regular stock checks.
  • Supervise and manage kitchen staff, including hiring, training, and scheduling.
  • Manage hands-on and online training for employees.
  • Oversee the Food Safety Management System, including COSHH Management and cleaning rota.
  • Stay up-to-date on allergen, employment law, and health & safety advice, and support your team's knowledge development.
Requirements:
  • Several years of experience in a managerial/head chef role in a fast-paced kitchen environment.
  • Experience delegating tasks and maintaining quick service.
  • Hands-on experience with menu preparation, ordering ingredients, managing costing/budgeting, and pricing.
  • Strong skills in cooking, food prep and service, customer service, and people management.
