We are seeking an experienced and passionate Senior Sous Chef to join our client's charming independent Victorian hotel, located in the heart of Hexham. The hotel boasts a welcoming open-plan restaurant, lounge, and bar that offer guests a free-flowing, informal space to enjoy our locally inspired, ever-changing seasonal menu.

As the Senior Sous Chef, you will play a key leadership role in their open kitchen, working alongside the Head Chef to ensure the smooth operation of daily kitchen activities. This role requires a creative and dynamic individual with a deep appreciation for locally sourced ingredients and a flair for crafting innovative, seasonal dishes that reflect the culinary heritage of the region.

Responsibilities:

  • Menu Development: Collaborate closely with the Head Chef to design and update our seasonal menus, featuring locally sourced produce and ingredients.
  • Kitchen Management: Oversee the kitchen's day-to-day operations, ensuring high standards of food quality, preparation, and presentation.
  • Team Leadership: Supervise and mentor junior kitchen staff, promoting a positive and collaborative working environment.
  • Stock Control: Manage inventory, order supplies, and maintain relationships with local suppliers, ensuring fresh and high-quality ingredients are consistently available.
  • Compliance: Ensure adherence to food safety, health, and hygiene regulations, maintaining a clean and organised kitchen at all times.
  • Problem Solving: Assist with troubleshooting and handling any issues that arise during service, maintaining a calm and professional demeanor.

Requirements:

  • Proven experience in a Sous Chef or Senior Sous Chef role.
  • Strong knowledge of seasonal produce and a passion for using locally sourced ingredients.
  • Excellent leadership and communication skills, with the ability to motivate and develop kitchen staff.
  • Ability to work efficiently under pressure, particularly during peak service times.
