Job Description
You are in charge of the kitchen and everything that goes out of the kitchen is your responsibility. To maintain complete control of the kitchen at all times and to command the respect of your kitchen brigade. Services to meet all standards and regulations and to run a profitable kitchen. More so you will gain the TRUST OF CLIENTS so they feel the need to visit the canteen.
This role maybe required from the beginning - ie. install and set up of the kitchen, may be recruit and train, menu planning through to grand opening. Short timescales. Need to be a fast runner!!
The main duties involved:
- To train and manage kitchen personnel established and new staff
- Supervise/coordinate all related culinary activities
- To estimate food consumption and requisition and purchase food
- To select and develop recipes
- To standardize production recipes to ensure consistent quality
- To establish presentation technique and quality standards
- To plan and price menus
- To create a vegan and vegetarian daily menu
- To promote healthy eating with good profit margins
- To calculate calories and document nutrients for menus
- To ensure allergens are managed throughout our kitchen processes
- To ensure proper equipment operation/maintenance
- To ensure proper safety and sanitation in kitchen
- To cook selected items
- To oversee special catering events
- To manage wastage
- Set up reporting system to Grabinsky’s management
The finer details
Monday to Friday onsite for either 6am start, to close at 4pm. Or 6.30am to 3pm. Saturdays 6am-1pm. (currently adhoc Saturdays until numbers increase on site).
Remuneration will be based on your history experience, your dedication and your expertise. What will become apparent very quickly is how your brigade react to your direction and instructions.
What’s important?
The ability to manage in a diverse environment where focus on client/customer service is essential. Hold a related level 2 culinary degree. We would like you to have 2 or more years of industry record, with construction site catering experience. You will need a First Aid certificate and hold a current Fire Warden certificate.
The special location
The location of our job is on a construction site, running the site canteen. Various locations across central London exist.
You will need to take a site induction test to demonstrate you can both speak and understand English. You have to pass this test before you are allowed onto the site to work. You require a passport and to share right to work in the UK documentation.
What to expect
Physical fitness is essential because you are on your feet all day. The kitchen is a high-paced environment to accommodate the operatives’ breaks, so the ability to remain calm under pressure is vital.
You need to be sensitive to others to get the best from the team. It’s really important to us that you are friendly and approachable as you will liaise closely with customers and the client, you will be on show.
Who will I work with and get support from at work?
You will report to the owners of Grabinsky’s Catering Ltd and you will be operating under both Grabinsky’s and site rules. On a daily basis you will be in direct contact with customers. You will get support from your brigade who will know the importance and feel the right energy from you.
