About the job

Based at the Mandarin Oriental Mayfair, London within the Culinary Department in London, the Pastry Chef de Partie is responsible to ensure a smooth running of the pastry section during service. The Pastry Chef de Partie reports to the Head Pastry Chef.

As Pastry Chef de Partie, you willresponsiblefor the following duties:

Prepare daily and weekly production list and market list in timely manner.
Lead the section with sense of urgency and ownership
Receiving and storing goods with the company food safety standard, stock rotation, FIFO and correct date labelling

As Pastry Chef de Partie, weexpectfrom you:

Execute all food items with standard recipe and plating guide as devised by the Pastry Culinary Team
Ensures that station opening and closing procedures are carried out to standard.
Report all deficiencies in kitchen equipment functionality Sous Chef or Head Chef in a timely fashion.
