As Senior Pastry Sous Chef, you will play a key leadership role in shaping the pastry and bakery offering, blending creativity, technical skill, and operational expertise. You will be instrumental in developing innovative, seasonal pastries and desserts that highlight the best local produce, overseeing daily pastry and bakery operations for efficiency, and mentoring a talented team to maintain the highest culinary standards.
Key ResponsibilitiesOperational Leadership- Oversee and coordinate daily bakery and pastry operations alongside the Executive Pastry Chef.
- Manage mise en place (MEP) for service and ensure a consistent supply of high-quality finished products for the pastry counter.
- Collaborate seamlessly with the savory team and take charge of pastry operations in the absence of the Executive Pastry Chef.
- Contribute to the creation of innovative, seasonal pastries and baked goods in collaboration with the Executive Pastry Chef.
- Ensure all menu items reflect the restaurants culinary vision while maintaining a balance between tradition and innovation.
- Lead by example, mentoring and training the team to maintain impeccable food quality, flavor, and presentation.
- Work closely with the Head Chef and Executive Pastry Chef to ensure daily production targets are met without compromising quality.
- Conduct regular quality control checks, refining techniques to ensure consistency across all pastry and bakery items.
- Foster a positive and collaborative work environment that encourages staff retention and professional development.
- Support ongoing training initiatives, ensuring the pastry team continually refines its skills.
- Work alongside senior management to build a strong, dynamic team that delivers excellence at every service.
- Uphold the highest food hygiene and health & safety standards, ensuring full compliance with all relevant regulations.
- Oversee the maintenance and upkeep of the pastry kitchen, reporting any issues to maintain a safe and efficient workspace.
- Support the Executive Pastry Chef in managing food costs, labor productivity, and back-of-house expenses to align with the restaurants financial goals.
- Contribute to overall commercial objectives by ensuring efficient stock control and minimizing waste.
- A deep appreciation for pastry and bakery craftsmanship, with a strong creative drive to push boundaries while respecting classic techniques.

- Proven Leadership Experience: Demonstrated success as a Pastry Sous Chef or in a comparable leadership role within a high-end pastry shop, bakery, or restaurant.
- Exceptional Culinary Skills: Extensive knowledge of pastry techniques, ingredients, and plating, with a passion for flavor development.
