A prestigious multi-site culinary operation is seeking an experienced Head Chef to lead a high-calibre kitchen environment. Covering 80+ PDR and events, this role is ideal for a dynamic professional with a passion for excellence in fine dining.

Role Overview

Position:
Head Chef

Responsibilities:

  • Recruitment and administrative duties
  • Overseeing comprehensive kitchen operations
  • Ensuring the smooth running of multiple outlets

Cover Details

  • Lunch: Up to 110 covers
  • Dinner: 150–180 covers
  • Events:
    • Monday to Friday for seated dinners, working lunches, and canapés
    • Oversee in-room dining (with one chef assigned, requiring supervision)

Candidate Profile

  • Experience:
    • Proven track record in large, high-calibre kitchens
    • Background in establishments with at least 2 rosettes and 5-star ratings
    • Multi-site management experience, including staff food operations and managing a very upscale staff room
  • Skills:
    • Ability to oversee comprehensive kitchen operations and lead a team of 34+ Chefs plus 9 kitchen porters, including 4 sous chefs
    • Creative yet compliant with a keen eye for new menu development
    • Master butcher and fishmonger skills
  • Attributes:
    • Excellent communicator, problem solver, and team player with no ego
    • Extremely organized, astute, and professionally mature
  • Note:
    • Candidates from small kitchens or private members clubs will not be considered

Working Hours & Service

  • Hours: 45–55 hours per week (overtime paid)
  • Service Expectations:
    • Aggressive service with up to 140 covers served simultaneously

Menu & Cuisine Focus

  • Styles:
    • British contemporary, French, and Italian with a touch of Japanese umami flavors
  • Essential Skills:
    • Advanced knife techniques
    • Butchery and fishmonger expertise
