Job Overview:

We are seeking an experienced and hands-on Assistant Food & Beverage Manager to support the Executive Chef, primarily overseeing evening and late shift operations across our Restaurant and Bar. The role involves managing the restaurant, bar, room service (including minibars), and eventsduring the evening hours. The ideal candidate will have a strong background in luxury hospitality, with a passion for delivering outstanding service and managing high-performing teams.

Key Responsibilities:
Operational Leadership:
  • Oversee the evening and late shift operations across all F&B outlets, including the restaurant, bar, room service, minibars.
  • Act as the senior F&B leader on duty in the absence of the Executive Chef during evening hours.
  • Ensure the highest level of service and guest satisfaction throughout all F&B operations.
  • Coordinate with the Sales & Marketing teamto manage evening functions such as private dining, and corporate events.
  • Monitor and support the delivery of room service orders and ensure minibars are restocked and maintained to standard.
Team Management:
  • Lead, motivate, and manage the F&B team during evening operations, ensuring smooth service and a positive guest experience.
  • Conduct pre-shift briefings to communicate daily objectives, VIP guests, and service expectations.
  • Provide on-the-job training and coaching to develop team members skills and ensure service excellence.
  • Manage shift schedules and team rotas, ensuring adequate staffing levels.
Guest Experience:
  • Handle and resolve guest concerns and complaints promptly, ensuring guest satisfaction.
  • Provide a visible presence on the floor, engaging with guests to create memorable experiences.
  • Monitor feedback and take proactive measures to address service gaps.
Financial Control & Reporting:
  • Assist the Executive Chef in managing budgets and controlling costs during evening operations.
  • Monitor sales performance and contribute to achieving revenue targets through up-selling and promotions.
  • Oversee the closing of daily sales, ensuring accurate reconciliation and reporting.
Health, Safety, and Compliance:
  • Ensure all F&B areas comply with health, safety, and hygiene standards, including allergen management and fire safety.
  • Conduct regular inspections of the restaurant, bar, and event spaces to uphold cleanliness and service standards.
  • Ensure all staff are trained in emergency procedures and licensing laws.
Collaboration & Communication:
  • Work closely with the Executive Chef to coordinate evening service and address any menu adjustments or guest requests.
  • Liaise with the Maintenance team to resolve any operational issues affecting service.
  • Communicate effectively with the Front Office team to coordinate guest requests, room service, and VIP arrangements.
  • Support the Executive Chef with inventory control and supplier management, including monitoring stock levels for the evening shift.
Qualifications & Skills:Experience:
  • Previousexperience in an F&B supervisory role, preferably within a luxury hotel or fine dining environment.
  • Strong background in restaurant, bar, and event operations.
Education:
  • Diploma or degree in Hospitality Management or a related field is desirable.
Skills & Competencies:
  • Exceptional leadership and team management abilities.
  • Strong knowledge of food and beverage service standards, including wine pairing and cocktail service.
  • Proactive and results-oriented, with excellent problem-solving skills.
  • Financial acumen, including experience with budgeting and cost control.
  • Excellent communication and interpersonal skills.
  • Proficient in using POS systems (e.g., Micros Symphony) and inventory management software.
Availability:
  • Ability to work evening and late shifts, including weekends and public holidays.
