MOI is a Japanese restaurant in Soho, offering an inventive fusion of Japanese flavours with a modern, elevated twist. The eclectic team at MOI brings together a range of culinary expertise, each skilfullyshowcased in every dish.Led by the Executive Chef Andy Cook the kitchen embraces Japanese cuisine as a canvas, highlighting peak-season ingredients and global influences to create dishes that are both complex and inviting. Specialising in meats and whole fish cooked over charcoal, MOI brings a smoky depth to its offerings, enhancing flavours with a signature, refined touch. The food is complemented by an eclectic range of exciting, uniquely chosen, premium yet approachable wine, with a focus on natural and biodynamic; a craft beer collab and a signature cocktail menu with emphasis on agave spirits, sake and accented by the same Asian influences as the food. Named with a nod to Sohos vibrant culture, MOI, literally translated as a bowl, presents a Neo-Japanese dining experience in a relaxed, stylish space where guests can savour the atmosphere as much as the food for patrons to see and be seen.

Role Overview

As the Restaurant Manager, you will take ownership of the day-to-day running of the restaurant, ensuring the highest levels of service, efficiency, and profitability. This role combines operational leadership, team management, and a strong focus on delivering an outstanding guest experience. You will work closely with department heads, senior management, and the broader team to maintain the restaurants exceptional standards while fostering a positive, inclusive workplace culture.

Key Responsibilities:

Operations and Leadership

  • Oversee the daily operations of the restaurant, ensuring everything runs smoothly and to the highest standard

  • Lead the front-of-house team, setting a professional example and inspiring excellent performance

  • Maintain compliance with UK health, safety, and hygiene regulations, upholding a safe and welcoming environment for both guests and staff

  • Coordinate with the kitchen and bar teams to deliver seamless service and ensure menu offerings align with the restaurants standards

Financial Management

  • Manage budgets and control costs, including labour, food, and beverage, to achieve financial targets

  • Monitor and evaluate sales performance, developing strategies to maximise revenue and minimise waste

  • Liaise with suppliers to ensure consistent quality and cost-effective procurement of goods

Team Development

  • Recruit, train, and mentor team members to build a motivated and high-performing team

  • Conduct performance reviews and provide ongoing feedback to encourage growth and accountability

  • Champion diversity, equity, and inclusion, creating a workplace where everyone feels valued

Guest Experience

  • Deliver an exceptional guest experience by ensuring consistent, high-quality service at every touchpoint

  • Engage with guests to build strong relationships, resolve concerns promptly, and incorporate feedback into service improvements

  • Act as the face of the restaurant, representing the brand in the local community and at industry events

Requirements:

Experience

  • At least 35 years of management experience in a high-end, fast-paced restaurant environment

  • Proven ability to manage daily operations while delivering outstanding results, ideally in central London or a similar market

Skills

  • Excellent leadership and interpersonal skills, with the ability to manage and motivate a diverse team

  • Strong financial management skills, including experience with budgets, profit and loss reports, and cost control

  • Comprehensive knowledge of food and beverage operations, with a passion for hospitality and service

  • Proficient in restaurant management systems, including POS, reservations platforms, and scheduling tools
