Salary: £28,434

Location: HMP prison services, Milton Keynes

Employment Type: Full time, 38 hours per week, working alternate weekends.

Shifts ranging between 8am - 6.45pm

About the Role:

  • Work with a team of chefs and enhanced inmates to deliver meals, 3 times a day.
  • Assisting and supervising enhanced inmates in the kitchen
  • Filling out kitchen paperwork and due diligence
  • Work alongside prisoner workforces and assist them in cooking meals and preparing food
  • You will be responsible for the preparation of basic quality foods within a set pre ordered menu
  • Effective and efficient food production in line with recipe sheets
  • Full knowledge of all menu items served
  • Be an excellent team player and be able to deal with conflict if it arises
  • Undertake relevant training as required

Catering Training Manager Qualifications & Experience:

  • Must have resided in the UK for the past 5 years and have legal right to work
  • Must be able to pass full security vetting and DBS checks
  • Management of production to ensure minimal wastage
  • Maintenance of food levels throughout all service periods
  • Maintenance of food quality and brand standards
  • Ensuring the maintenance of high hygiene and health and safety standards in line with requirements and identify any anomalies and incidents
  • Capturing and recording all volumes consumed and overproduction
  • Assisting in the compilation of all shift opening and closing checklists
  • Discussing ideas or improvements with line manager
  • Act as a trainer/ coach for new team members to learn procedures and standards for all kitchen tasks.
  • Undertake relevant training as required
  • In addition to the above, Chefs may occasionally be required to undertake ad hoc back of house and front of house duties in line with business requirements.
  • ALL chef staff must wear long sleeve chef jackets and non slip shoes.
