CHEF DE PARTIE

An exciting opportunity has arisen for a Chef De Partie at the Award winning Three Mile Pub, Pizza Dough Co and 4-star Great North Hotel, in the heart of Gosforth. If you have passion for the industry and creative flair in the kitchen, then you might just be what were looking for.

Position Reports To: Head Chef

Hours 0-40 hrs include weekends and Bank Holiday

Rate of Pay £13.00-13.50ph

Main Job Purpose & Scope

  • Assist the senior team with the management of food excellence and kitchen staff in the outlet.

Key Areas of Personal Responsibility and Accountability

Assist in the Design and costing of menus for your outlet to maintain profit margin.

Ensures that high standards of sanitation, cleanliness and safety are always maintained throughout all kitchen areas.

Work with Head Chef to implement controls to minimize food and supply waste and theft.

Implement recipes and techniques for food preparation and presentation to assure consistency, quality and to minimize food costs.

Interacts with Sous Chef & Head Chef to assure that food production consistently exceeds the expectations of customers.

In conjunction with management team, assist in maintaining a high level of service principles in accordance with established standards.

Evaluates products to assure that quality, price, and related goods are consistently met.

Monitor packages and costs when ordering and on delivery.

Assist Head Chef and Sous Chef in the management of COSHH systems in allocated outlet.

To co-operate with quality management and standards bodies (e.g., Government Departments, HSE etc.)

Experience in Pizza making an advantage.

Financial

  • To understand the long-term business plan.
  • To possess an understanding and awareness of the continual financial forecast identifying adverse trends.
  • To assist in the management of all costs and expenditures such as controlling portion size, general wastage, theft.
  • To monitor and assist with the management of all aspects of stock control.
