My client, an award winning Hotel and resort operation in West Cornwall are actively looking to recruit an experienced sous chef to join the team.

We are looking for an expeienced Junior sous looking for his nest step up or sous looking for their nest challenge and have exposure in high profile events such as weddings and conferenses, along with the day to hotel breakfast, lunch and dinner operations.

Main Job brief and what we are looking for:

  • Approximately 40 hours per week, over 5 days including weekdays, weekends, evenings and bank holidays, of varying 8-hour shifts.
  • To undertake any other duties deemed appropriate by the Executive Head Chef.
  • To undertake any relevant staff training deemed appropriate.

Relieving the Executive Head Chef on secondary duty when he/she is off duty, on annual leave, etc in the following areas (otherwise under the supervision of the Head Chef/Senior Sous Chef):-

  • To generally oversee the smooth and efficient operation and running of the Kitchen.
  • Ordering of goods and ensuring the kitchen is fully stocked.
  • Responsible for updating menus.
  • New staff inductions and subsequent training.
  • Responsible for the weekly staff rotation to ensure appropriate cover of the kitchen.
  • To ensure all foods are prepared properly and are in accordance with Health & safety regulations.
  • Checking the cleanliness of the Kitchen area is up to a high standard at all times.
  • To provide a consistent level of support to all the Kitchen staff.
  • To be responsible for taking appropriate disciplinary action against members of staff for misconduct, etc.
