We are looking for a Head chef to come and leadthekitchenteam at Kota Kai, this isavery exciting role for the right person, and anopportunityto be a part of the teamdrivingthe success and growth of one of Jude Kereamas established busyharbour sideCornishrestaurant.


Salary:Up to £47,500 per year,made up of base salaryof £38,000 plus additionalcontractual bonus schemeandapprox£9,500 per year in tips (based on last years earnings)

The Role

As the Head Chef you will beresponsible for overseeing theday to daykitchenoperations,ensuring exceptional food quality, and working with the team toensureexpectedqualityandstandardsare always maintained.Yourrole willincludelinemanagementofthekitchen team, stock control and you will lead on the cost control for the kitchen department,includingresponsibility for staffing costs soa strong understanding of departmental finances is essential.

You will be anaturalleader, and understand the importance of a positive culture within the workplace.

As amemberof the Seniorleadership team(SLT)you will have a dynamic approach to problem solving and take challengeswithinyour stride, this role will work closelywiththe Business Owner, Jude Kereama, on all areas of menu development, and with the wider SLT onbusinessgrowth and planning.


Responsibilities:

-Overallmanagementofthekitchen department & team

- Create and develop new menu items and recipes

-Ensure all exceptional standards are achieved at all times

-Responsible for the ongoing recruitment, induction, training & appraisals of all kitchen staff.

-Stock control, ordering & maintaining & forging strongsupplierrelationships

-Responsible for maintaining the Food GP through efficient costing of all menus&regular checking of invoicing
-Control wage costs in line with budget and sales performance. Creating all kitchen rotas and managing staff levels accordingly.
-- Have acomprehensiveknowledge of food safety,includingallergens, compliance and administrationrequiredtomaintaina 5 star food hygiene score.


Skills:

-Head chefexperience,in a similar sizebusiness.

- Strong knowledge of various cooking techniques and cuisines.

- Excellent leadership and communication skills, working well under pressure andkeepinga calm head ensuringtheteam arefocusedand workingtogethertoachievegreat results.

- An understanding of departmental financesincludingwage costs.

- Experience managing a successful food hygiene plan.

Hours:

Kota Kai is open 7 days a week in busy months, dropping to 5 days intheshoulder seasons.As Head Chef you would be in charge of the rota, shift plans and managing your team, there isflexibilityfor a 4 day working week with theemphasison you to ensure thekitchen isstaffed to deliver success.
