Main Purpose of the Role

The dedicated catering team is committed to preparing delicious and wholesome meals that blend comforting classics with exciting new flavors to sustain the adventure. As a Chef, you will integrate into a welcoming and supportive team, under the guidance of the Head Chef. Your role will involve delivering top-quality meals to eager guests, focusing on food preparation, cooking, managing stock and costs, and mentoring junior staff members. Enjoy manageable working hours with limited late nights, most weekends off (particularly during off-peak seasons), and no work during the Christmas period—this position offers an ideal opportunity to advance your culinary career while maintaining a balanced personal life.

Responsibilities

  • Compliance:
    • Ensure all food preparation and service adhere to health & safety, food safety/HACCP, allergen management, and organisational standards.
    • Maintain rigorous standards of cleanliness and hygiene, adhere to cleaning schedules, and suggest improvements.
    • Complete due diligence records accurately, taking corrective actions when necessary to guarantee food safety.
    • Follow standard operating procedures, HACCP plans, Safe Systems of Work, and health & safety training to sustain a safe working environment.
  • Customer Focus:
    • Manage meal preparation and stocking to meet expected volumes, ensuring the food remains appealing.
    • Keep consistency in food preparation, cooking, and presentation across all shifts.
    • Cater to specific medical dietary needs, overseeing all aspects of food delivery and cleanliness.
    • Lead pre-shift briefings to discuss dish details, portion sizes, allergens, and dietary requests, actively monitoring food quality and resolving any issues during service.
  • Team and Commercial Management:
    • Support the development of Assistant Chefs and Catering Assistants, taking on leadership roles when the Catering Manager or Head Chef is absent.
    • Manage stock during shifts and prepare food according to production plans and management guidance, focusing on minimizing waste and controlling costs.
    • Use Nutritics recipe management software for recipe scaling and understand safe methods for food chilling, reheating, or repurposing.
    • Maintain equipment and ensure a healthy, safe working environment, delegating tasks effectively to meet departmental needs and addressing issues promptly.
  • Professional Development:
    • Collaborate with Catering Management to ensure accurate reporting of medical dietary needs and implement post-audit action plans.
    • Act as a positive role model for catering assistants, continually seeking personal development and applying learned skills to enhance operations.
    • Engage in the management of the catering department by attending meetings, fulfilling directed duties, and managing emergencies effectively.
  • Centre Specific Duties:
    • Play a senior role in the overall operation of a residential activity centre, addressing guest and colleague queries, handling emergencies, and providing support across departments and other centres as needed.
