Our client offers fine dining and exquisite cuisine, where every dish tells a story and invites you to savor the artistry of their culinary creations. They are seeking a passionate and talented Intercontinental Chef to join their team in London and contribute to their innovative dining experience.

The Intercontinental Chef will be responsible for creating and executing a diverse, globally inspired menu that reflects the restaurant's upscale and innovative dining experience. This role requires a deep understanding of international cuisines, exceptional culinary skills, and the ability to lead a kitchen team to deliver high-quality dishes consistently.

Please note- working hours will be Wednesdays and Thursdays from 2 pm until close, and Fridays, Saturdays, and Sundays from 11 am until close. This is subject to change.

Are you the right person for the job?

What will your role look like?

Menu Development and Innovation

  • Design and develop a globally inspired menu that incorporates flavors and techniques from various cuisines (e.g., Mediterranean, Asian, Middle Eastern, Latin American)
  • Create seasonal menus that align with Ivory Seasons' brand and customer preferences
  • Introduce innovative dishes and cooking techniques to keep the menu fresh and exciting
  • Ensure menu items are cost-effective and align with the restaurant's financial goals

Kitchen Operations

  • Oversee daily kitchen operations, including food preparation, cooking, and plating
  • Ensure all dishes are prepared to the highest standards of quality, taste, and presentation
  • Maintain consistency in food quality and portion sizes
  • Manage kitchen workflow to ensure timely service during peak hours

Team Leadership and Training

  • Lead, train, and mentor kitchen staff, including sous chefs, line cooks, and prep cooks
  • Foster a collaborative and positive work environment in the kitchen
  • Conduct regular training sessions to improve skills and knowledge of the team
  • Delegate tasks effectively and ensure all team members understand their roles

Inventory and Cost Management

  • Manage inventory levels and order ingredients, ensuring freshness and quality
  • Minimise food waste through efficient inventory management and portion control
  • Monitor food costs and work with the General Manager to stay within budget
  • Build and maintain relationships with suppliers to source high-quality ingredients

Compliance and Safety

  • Ensure the kitchen complies with all health, safety, and sanitation regulations
  • Maintain a clean and organised kitchen environment
  • Conduct regular inspections to ensure food safety standards are met
  • Train staff on proper food handling and safety procedures

Collaboration with Management

  • Work closely with the General Manager to align the menu with the restaurant's overall vision and goals
  • Participate in marketing initiatives, such as special events, promotions, and social media campaigns
  • Provide input on pricing and profitability of menu items
