Opened in Spring 2024,OMA is a restaurant located in the heart of Londons thriving Borough Market, inspired by the fishing villages and shores of the Greek isles and further Levant.
It is the latest project by the dcco. collective [ SMOKESTAK, manteca ].
A site in the capitals iconic markethas been thoughtfully restored with natural and repurposed materials that echothe raw and wild landscapes of Greece. Central to the kitchen is a wood-burning hearth with all manner of grilled and skewered meats form our in-house butchery, alongside vegetables from flourish farm, youvetsiclaypots, and a raw bar serving crudo, ceviche and tartar from day-boat catches in Cornwall.
A 400-bin wine list with a dedicated wine team showcases unique selections from Greece and the wider Mediterranean and mainland Europe. Seating 80 inside with afurther 50 on a fully enclosedterrace overlooking the market, this is a unique proposition within the area.

About the role.
We are looking for an experienced sous chef to join our team.
Ideally, youll have a few years of working as a sous chef in a similar environment with experience in dynamic and creative environments. Youll be cooking in a kitchen that cares about the food it sends out and be working with amazing, fresh produce from some of the best suppliers in the country alongside a well-established and tight knit team.
Responsibilities.
Working with the head chef to manage the wider team.
Leading by experience and fostering a positive, supporting team culture.
Dealing with suppliers,building and maintaining strong relationships with key contacts.
Making sure that every dish reflects the quality and standard of our restaurant.
Maintaining a sense of calm and control during busy services.
Overseeing daily task checklists and management of the kitchen.
Working with wider restaurant management team to uphold the quality and experience of our restaurant.
Requirements.
Previous experience in a professional restaurant environment essential.
